Molten Lava Cake

One of the worlds most favorite desserts, a liquid center chocolate cake. This version is made with a Ganache center. Recipe: On Baking 3, page 616

    I do see this dessert a lot on certain menus. Can you add fruit such as raspberries or strawberries in the center? If so does it change the texture of the Ganache?

    This is one of my favorite recipes in On Baking III book. Chocolate cake and ganache are rich and when serving with raspberry sauce, it comes out superb.

    What is the way to make sure that when you cut into the chocolate cake that ganache comes oozing out? When we made it in class and even I made it at home the ganache did not ooze out like I wanted.

    perhaps put a spin on the whole concept and make a vanilla molten cake with a white chocolate filing. Now that sounds like something to definitely try.

    This cake is so delicious and tender . The only bad thing I saw was that part of the chocolate burn at the bottom of my pan and when I cut it open there was nearly any chocolate 🙁 but at the end is still good s to share with you girlfriend …. No just kidding chef 😀 …….

    A great and delicious dessert! I like the combination of a chocolate cake with a melted chocolate in the center. But it is possible to fill it up with white chocolate instead of regular chocolate? I think that will be something new and amazing. Otherwise the fruit compote is an excellent combination of flavors and the tuile butter makes look the dessert unique and pretty. I really like this dessert

    I have made this many times with letting the chocolate be underdone in the center.( and have felt uncomfortable serving it to people) Your recipe, with the ganache center that has no egg in it, makes me feel more confident. It is truly a wonderful, delicious, and safe dessert to serve to all. Again, thank you for such a delicious alternative and should be the standard for all.

    It was fun to learn how these cakes are made; however, I wish that could have made a more interesting flavor combination in class instead of just chocolate cake & chocolate ganache. Would this recipe work with a different cake batter? For instance, would an orange flavored pound cake batter with a chocolate ganache work? Or even if you just switched the ganache for a caramel or a fruit-based center…I feel like this would have helped out the aesthetics of the dessert as well.

    This was one wet cake that I enjoyed and I would have love to have that vanilla bean ice cream with it. The funny thing is that I don’t like vanilla ice cream.

    My favorite but next time I make it I will try to incorporate with the melted chocolate in the center, a cherry and a tart cherry sauce on top.

  30. I made this at home, at first I was scared how it would turn out but it turned out wonderful! However this is a little bit sweet to me so I served it with homemade vanilla ice cream and it was AMAZING! I would want to try to make it with other flavors.

    This was so yummy! I was glad to learn to make this as well as the tuile we used to adorn the cake, though I needed to be a bit quicker with the shaping of my tuiles. I’d like to try this recipe again, but this time make the ganache with peanut butter or gianduja.

  32. Beautiful dessert with filling in the center and I could make it with different filling to make it work well with the cake. Kind of similar with wedding cake but wet filling is a weapon.

    i love the combination of passionfruit and chocolate so i would make the ganache flavored with passion fruit puree to give it something more than just that typical chocolate on chocolate

    I always wanted to be able to make these cakes… This is another one I will most likely make for family at the holidays, might try inserting a fruit in the middle with the ganache and some kind of an orange sauce.
